Recipes: Balsamic Chicken w/ bell peppers and onions & Muffins

I’m going to try to do at least one recipe a week. Seeing as I’ve made two things this week, I’m doing two. Both are from Gluten Free Goddess’ blog ๐Ÿ˜€

First up was the Balsamic Chicken with Onions and Bell Peppers

Balsamic Chicken with Peppers and Onions

So this was my first meal I made after my first day back at school{Monday}. It was super easy to make, all in the oven. I had enough of the peppers/onions/sauce that I made a second chicken breast. It would be just my luck that right before they were done cooking, the power went out. It was almost time for them to come out, so I left the oven closed until they were ready. I also had just started simmering some rice. Both of my room mates were home so we were worried that the food in the fridge would go bad before the power came back on. So no opening the fridge {or putting leftovers in the fridge}. Luckily my room mate Julia was hungry so I offered it to her for dinner. Yay perfect timing ๐Ÿ˜€ The overall consensus was it was super tasty! Shortly after we started eating, the power came back on. Unfortunately the rice didn’t make it. Next time I will definitely make rice with it {maybe the minute rice bowl things}.

Next up was Gluten Free Banana and Chocolate Chip Muffins

Muffins

So tonight was room mate night ๐Ÿ˜€ We met at Asian Bistro at 5 for $2 Tuesday. How have I never been to this?! $2 Sushi, drinks and other hot foods! I had a California roll, a shrimp tempura roll and fried rice. Some seriously good food. We were so full when we came back. But I finally got the energy to make these muffins.

The plan was to just do mini muffins, but my pan was too small. Instead, I did a small batch of mini muffins and a batch of regular muffins. The only thing I changed to the recipe was added chocolate chips to the batter.

I used this recipe for the muffins. Both my room mates had them as well as one of their friends and all of them loved it! They said they taste like regular muffins, which is exactly what I was going for ๐Ÿ˜€

Why I’m thinking about gluten free…

I’ve always longed to cook, but in my family it just wasn’t ok for me to cook {long story}. For about 6 months last year, I lived with my Aunt and that was the best cooking experienceย  I had had my entire life. My Aunt is an amazing cook, just like her mom, she forced me in the kitchen and showed me a new love of food that I hadn’t really had{minus the couple of summers I spent with her growing up}. I loved every minute of it, and still cherish it to this day. This is the beginning of my love of food.

After I moved back in with my parents, the same old of not being able to cook kicked in. I was there for about half a year before I got my apartment.ย  Oh my apartment… I love that little home of mine. My room is on the bottom floor next to the kitchen {God’s plan I’m sure} When I saw this kitchen I knew that I would be able to make something amazing in it. Right about this time I was thinking about being gluten free and had been reading up on the benefits of it.

I love that I have my own kitchen. With being pretty broke, this surprisingly led to me cooking a lot in order to save money. Trying to cook as gluten free as possible meant that I knew what was going in my food. I was constantly looking for new recipes to try and loving the outcome of the food I made. Everything was amazing! {ok there is that one dish that is still in the freezer because it wasn’t that great} I love cooking. I zone out every time and I love it when my room mates come in the door and exclaim “What ARE you cooking??? It smells amazing!” It would make my day ๐Ÿ˜€ I’ve also found that cooking isn’t as fun unless there is someone to share it with.
I still haven’t fully committed, but I want to. {I have a serious pasta/ย chef boyardee ravioli problem!}

Reasons for me to be Gluten Free:
I’ve been rather weak/lazy feeling for a long time // I have no idea if it’s related {probably is somehow} but there are certain foods I eat that afterwards I burp and it tastes like rotten eggs {can you say gross?!}. // I’ve also been getting these weird patches of rash on my legs lately that are annoying.
