Recipes: Balsamic Chicken w/ bell peppers and onions & Muffins

I’m going to try to do at least one recipe a week. Seeing as I’ve made two things this week, I’m doing two. Both are from Gluten Free Goddess’ blog :D

First up was the Balsamic Chicken with Onions and Bell Peppers

Balsamic Chicken with Peppers and Onions

So this was my first meal I made after my first day back at school{Monday}. It was super easy to make, all in the oven. I had enough of the peppers/onions/sauce that I made a second chicken breast. It would be just my luck that right before they were done cooking, the power went out. It was almost time for them to come out, so I left the oven closed until they were ready. I also had just started simmering some rice. Both of my room mates were home so we were worried that the food in the fridge would go bad before the power came back on. So no opening the fridge {or putting leftovers in the fridge}. Luckily my room mate Julia was hungry so I offered it to her for dinner. Yay perfect timing :D The overall consensus was it was super tasty! Shortly after we started eating, the power came back on. Unfortunately the rice didn’t make it. Next time I will definitely make rice with it {maybe the minute rice bowl things}.

Next up was Gluten Free Banana and Chocolate Chip Muffins

Muffins

So tonight was room mate night :D We met at Asian Bistro at 5 for $2 Tuesday. How have I never been to this?! $2 Sushi, drinks and other hot foods! I had a California roll, a shrimp tempura roll and fried rice. Some seriously good food. We were so full when we came back. But I finally got the energy to make these muffins.

The plan was to just do mini muffins, but my pan was too small. Instead, I did a small batch of mini muffins and a batch of regular muffins. The only thing I changed to the recipe was added chocolate chips to the batter.

I used this recipe for the muffins. Both my room mates had them as well as one of their friends and all of them loved it! They said they taste like regular muffins, which is exactly what I was going for :D

Why I’m thinking about gluten free…

I’ve always longed to cook, but in my family it just wasn’t ok for me to cook {long story}. For about 6 months last year, I lived with my Aunt and that was the best cooking experience¬† I had had my entire life. My Aunt is an amazing cook, just like her mom, she forced me in the kitchen and showed me a new love of food that I hadn’t really had{minus the couple of summers I spent with her growing up}. I loved every minute of it, and still cherish it to this day. This is the beginning of my love of food.

After I moved back in with my parents, the same old of not being able to cook kicked in. I was there for about half a year before I got my apartment.¬† Oh my apartment… I love that little home of mine. My room is on the bottom floor next to the kitchen {God’s plan I’m sure} When I saw this kitchen I knew that I would be able to make something amazing in it. Right about this time I was thinking about being gluten free and had been reading up on the benefits of it.

I love that I have my own kitchen. With being pretty broke, this surprisingly led to me cooking a lot in order to save money. Trying to cook as gluten free as possible meant that I knew what was going in my food. I was constantly looking for new recipes to try and loving the outcome of the food I made. Everything was amazing! {ok there is that one dish that is still in the freezer because it wasn’t that great} I love cooking. I zone out every time and I love it when my room mates come in the door and exclaim “What ARE you cooking??? It smells amazing!” It would make my day :D I’ve also found that cooking isn’t as fun unless there is someone to share it with.
I still haven’t fully committed, but I want to. {I have a serious pasta/¬†chef boyardee ravioli problem!}

Reasons for me to be Gluten Free:
I’ve been rather weak/lazy feeling for a long time // I have no idea if it’s related {probably is somehow} but there are certain foods I eat that afterwards I burp and it tastes like rotten eggs {can you say gross?!}. // I’ve also been getting these weird patches of rash on my legs lately that are annoying.

Feeling a bit off today

Do you ever have one of those days where you feel like something isn’t adding up? Earlier today I bought a domain name, which is something I’ve wanted to do for a while. The only thing is that I didn’t think about having a web host before buying it. Now I’m all sorts of lost {and pretty broke too} I’m starting to think maybe God is trying to tell me something that I’m not getting yet.

So much to do, so little time…

I’ve been home for about a month now. The only thing I knew I had to do before I moved back to my apartment was clean my rooms. Yup you heard that right rooms. See I’m an only child, and the upstairs is my domain. There’s two bedrooms with bathrooms in both. One of them is of course my bedroom and the other is my craft room. Between moving to and from Alabama and then my apartment at college, my rooms have collected a bit of clutter. {OK by bit I mean a LOT} You get the point, I need to clean.

Why does the internet have to be so much more interesting than cleaning?

Another thing on my to do list: work on My Shop. I have a TON of stuff to do. Take pictures of new earrings, re-do the necklaces I want to list, and get my shop to a place where I can make decent sales. {see tons of work :D}

Hi!

I’ve spent most of today working on this little blog and fighting with firefox. I got the blog like I like it, but firefox will have to wait until tomorrow.

My hope for this blog is that it will be a positive outlet for everything going on in my life. I’m about to be a full time art student, something I’ve longed for for a while. I have a passion for roller derby! Although I may not be able to skate as much as I would like {flat feet} I know the sport and love helping the newbies that come in. I recently started cooking gluten-free and I have opened up a new passion of cooking. {I never really started cooking until I moved out} I have the most amazing boyfriend ever! We just celebrated our 5 year anniversary a few days ago! {Yay!} I’m sure I will share some strange stories of the two of us on here. {We like video games, cars, guns, and random things}

I’ve been a music student for the past 4 years. After basically being forced to start over for a year, I’m finally realizing that my crafty hobby may be more than that, hopefully a career.

I have dreams of being an art therapist. I’ve always loved helping people, and I love the idea of helping someone with art. Helping them to express themselves with whatever is going on in their lives seems so rewarding.

So much for a quick intro… by the way I forgot to mention I like to talk, a LOT! sorry if I ramble, because it’s bound to happen.
